Recipe - Spiced Pear Butter

I absolutely love pears. So when my husband and I went to the orchard a couple of weekends ago, my eyes were much bigger than my stomach. There was no way we could consume all of these while they were ripe.
So I did what every fruit-lover does... canned them to last seasons to come.

I did also whip up a deliciously Spiced Pear Butter. I imagine my next batch will include some cranberries thrown in for a lovely sweet & tart combo (my favorite).



This recipe couldn't be any easier, so I hope you will give it a try. Let it stew away in your crock pot and your home will smell simply divine. This works with slightly under or over ripe fruits. Think apples & beyond. Of course, I prefer to use freshly ground spices, but use whatever you have on hand. Enjoy!

Spiced Pear Butter
Ingredients:

5 1/2 lbs. Pears (choose your favorite kind)
2 cups Sugar
1 tsp. Cinnamon
1/2 tsp. Ground Ginger
1/4 tsp. Ground Clove
1/2 tsp. Finely Ground Salt

Peel, core & finely chop the pears.
Place all of the ingredients into your crock pot and give it a good mix.
Cook on the high heat setting, covered, for 1 hour.
Give it another good mix.
Set the heat setting to low and let it brew for 10 hours. Note: This is a great overnight project - you will wake up amazed by the smell.
Set the heat back to high and allow to cook, uncovered, for another 1-2 hours (this is where you can adapt based on the consistency you prefer).
If you like your toppings thinner, leave it as it is. If you prefer them thicker, give it a good mixing with a whisk, or puree to break down the pears entirely.
Spoon into your favorite jars and seal. Heat process however you like, oven or water-bath.

I'll likely be sending a few of these to far-away friends for holiday treats. Dress them with cocktail utensils and ribbons, sprigs of fresh herbs or custom labels for an extra special gift!

The Greek... Cupcake

My husband and I have been terribly missing Greece lately. Painfully, really. I've been conceptualizing this cupcake for some time, pondering the perfect balance of all those great Greek flavors. What I love about Mediterranean sweets (they never call them desserts) is that while ridiculously sweet, they still maintain a rich, nutty flavor.

So this weekend, I finally put it together. All of my favorite ingredients (perhaps its the Greek roots) together in one moist little crumby package!

Dark Clover Honey (from Meli Cafe - on Halsted in Greek Town). Fruity Olive Oil. Warm, Spiced Cinnamon. Creamy, Tangy Greek Yogurt. Toasted, Rich Walnuts. Sweet Oranges. Tart Lemons. Floral Vanilla. How could you not love these flavors?! The smell from the oven was just enough to bring me back and remember all of our great meals, just as I had hoped.

The cake itself, with the Greek Yogurt, Olive Oil, Vanilla, Lemon & Orange Zest would be a gorgeous Sunday morning snack. Topped with smooth and amazing Cream Cheese Frosting, it's been taken to another level. Spiced with Cinnamon and smothered in toasted Walnuts, The Greek has become my new favorite cupcake!

Whew!

What a crazy past 2 weeks it's been... and it's still coming on strong.

Between wedding season, amping up and being let down for the farmer's markets (thanks to the skies) and our first delivery to WHOLE FOODS(!!) it's been sheer craziness.

It's been favor central here. Brownie Favors, Cake Truffle Favors, Jar Favors, Cookie Favors, Orange Favors, Pink Favors, Green Favors, Blue Favors. You name it, we've favored it.

  

Holly thinks she has "bow-finger". This is clearly a serious condition induced by tying far too many ribbon bows.

We still have plenty of wedding favors coming up in the weeks to come and we love every single one. Custom orders are what keep us inspired! Check out a small selection of our favors here!

Big News! Whole Foods Lincoln Park is now selling our Cake Truffle Pops! Stop in, grab one and let them know you love (cacao). Hint: We would love them to stock up on our Whoopie Pies too, so a slight mention would never hurt. :)

Welcome to the New Blog... and Website!

I'm a little behind the times. Some call me old-fashioned. What's so bad about pen and paper, really?

Well anyway, here we are. A [much-delayed] fresh new blog for (cacao) sweets & treats. We intend to share details about our happenings, new ideas and, of course, some tips and recipes (personal and all!).

The big news is about our new website - finally! Being the old-fashioned girl that I am, it's been a bit of a thorn in my side. But I plugged along, realized it's not my strength and let someone else take over (thanks Tiffany!). And I can say I'm pretty happy with how it turned out. It's complete and ready to go!
